Nachos should be piled high and super slutty. Anemic tortilla chips with melted cheddar and pickled jalapeños need not apply. At Red Pepper, thick, crunchy tortilla chips smothered in a thick white cheese dip are made hearty with creamy black beans, chunks of grilled chicken breast (or steak), shredded lettuce, chunky guacamole, a little Mexican sour cream and some pico de gallo.
