Chef Mimmo's Steak Nachos

Prep Time 60 minutes
Servings 4-6 people

Marinated Steak

-24 ounces peeled hanger steak loins

-3 tablespoons olive oil

-1 teaspoon pepper ‘butcher ground’

-1 ½ teaspoons spanish paprika

-1 ½ teaspoon granulated onion

-1 ½ teaspoon granulated garlic

-1 ½ teaspoon dry mexican oregano leaves

-2 teaspoons kosher salt

marinate for couple hours | warm your grill for 30 minutes, at high heat cook

the steak to your favorite temperature 6-8 minutes | remove and put aside


-16 ounces whole milk

-20 ounces white extra melt cheese (land o lakes brand)

bring milk to 120 degrees, gradually add the cheese until all melted, liquify with

hand mixer | remove and keep warm aside

Black Beans

-16 ounces black beans triple washed

-2 liters water

-2 ounces chopped onions

-2 ounces chopped garlic

-1 tablespoon kosher salt

-4 fresh sprigs epazote

bring all to boil, cover and simmer for 45 minutes, liquify | remove and keep

warm aside


-3 lightly firm avocados

-3 tablespoons lime juice

-1 teaspoon kosher salt

-1 habanero pepper minced

muddle all ingredients in a mixing bowl and refrigerate with one avocado seed

Nacho Fixings


-baked or fried corn chips (milagro brand)

-cheddar cheese shredded

-pickled sliced jalapeños

-grilled shucked yellow corn

-shredded romaine lettuce

-pico de gallo


-sour cream (cacique brand)

warm up your favorite tortilla chips, add melted queso, beans, steak and pile

everything gradually. Warning don’t eat your fingers

Queso Fundido w/ Karma Margarita


Prep Time 20 minutes
Servings 4-6 people


-4 oz shredded Chihuahua cheese

-4 oz shredded mild cheddar cheese

-2 oz shredded panela cheese

-4 button mushrooms halved

-1 oz tomatoes diced (seeded)

-1/2 oz red onion diced

-1/2 oz spinach chopped

on a 10 inch iron skillet layer everything in order like a pizza and bake

4-6 minutes at 500 degrees. Remove, drizzle the truffle oil and serve

with warm tortillas

-1 ½ tablespoon white truffle oil

-8 flour or corn tortillas


Karma Margarita

-12 oz Karma tequila silver

-4 oz karma agave nectar

-4 oz soda water

-8 oz fresh lime juice

-8 oz watermelon juice

-6 wedges watermelon to garnish

fill a 48 oz pitcher with ice, pour tequila, lime juice, watermelon juice and stir well… serve on a chilled glass with salted rim
